Banana Chocolate Chip Muffins

These grain-free, paleo muffins are moist and delicious. Once you make them the first time everyone in your family will be asking for them again and again.

Ingredients
  

  • 1 ½ cups almond flour
  • ½ cup arrowroot flour
  • ¼ cup coconut flour
  • 3 tsp baking powder
  • ½ tsp salt
  • 2 eggs
  • 1 cup mashed banana (2 large bananas)
  • ¼ cup olive oil
  • ¼ cup coconut sugar
  • 1 tsp vanilla
  • ½ cup chocolate chips (Enjoy Life brand are dairy free)

Instructions
 

  • Preheat oven to 350°.
  • Sift together almond flour, arrowroot flour, coconut flour, baking powder and salt in a bowl.
  • In a second bowl mash banana. Add eggs and whisk together. Stir in olive oil, coconut sugar and vanilla.
  • Pour wet ingredients into dry ingredients and stir to combine. Add in chocolate chips.
  • Fill parchment lined muffin cups with batter. Bake for 20-25 minutes, until toothpick inserted comes out clean.
  • Makes 12 muffins.

Notes

Chocolate chips can be replaced with coconut flakes or raisins.
