Carrot Spice Energy Balls

These Carrot Spice Energy Balls are healthy little nuggets naturally sweetened with dates, carrots and warm spices that taste like carrot cake.

Ingredients
  

  • 1 cup Medjool dates
  • 2 tbsp tahini
  • ½ cup grated carrot
  • ½ cup coconut flakes
  • ½ cup walnuts
  • ½ cup pecans
  • 1 tsp cinnamon
  • ¼ tsp nutmeg
  • 1/8 tsp cloves

Topping

  • 1/2 cup coconut flour or coconut flakes
  • ½ tsp cinnamon optional

Instructions
 

  • If dates are dry, soak in hot water for 10 minutes to soften.
  • Grate carrots. Put grated carrots in cheesecloth or dish towel and squeeze out excess liquid.
  • In food processor, chop dates. Add tahini, carrots, coconut, walnuts, pecans, and spices. Pulse to chop nuts and combine ingredients.
  • Form into 1” balls.
  • Combine coconut flakes and cinnamon, if using. Roll balls into coconut flakes or coconut flour. Store in fridge.

Notes

We like these energy balls to be a bit on the softer side, but of you prefer a drier energy ball you can add rolled oats to your mixture. Start with two tablespoons and add a tablespoon at a time to desired level of moisture. Be sure to not add too much or they will no longer stick together.
These can be rolled in either coconut flour or coconut flakes.
