I had planned on sharing a recipe for a delicious curry dish this week, but it just didn’t happen. The recipe is wonderful but I was not feeling inspired to do the writing done for the blog. Sometimes when my motivation is low, I go to the kitchen to find inspiration. That is exactly how these tasty little bites were born, and once I started snacking on a few of these I knew you’d want this recipe too. Chocolate Chip Cookie Dough Bites are ready to eat in five minutes, perfect for a cup of tea or an after school snack. Stay tuned for the curry recipe, but enjoy some cookie dough bites in the meantime.
What I love about these Chocolate Chip Cookie Dough Bites is that they can be ready to devour in just five minutes. You might love the fact that they’re so easy to make that you can give the task to your children or have them make them with your supervision if they’re young.
One bowl and some measuring cups and spoons is all you need to make these tasty little bites. If you want to get a bit fancy you could dip your bites in melted chocolate, or drizzle melted chocolate over top of them before serving.
I added Enjoy Life brand mini chocolate chips, which are dairy free. You can use regular chocolate chips if that is that you have in your pantry. You can get creative with additional ingredients like pumpkin seeds, dried cranberries, flaked coconut or chopped almonds, walnuts or pecans. You could use almond for your Chocolate Chip Cookie Dough Bites, but I used almond meal.
What is the difference between almond meal and almond flour?
Almond meal is coarser than almond flour, Almond flour is more finely ground. Almond meal is ground whole raw almonds, whereas almond flour is made with blanched (peeled) almonds. If you don’t have almond meal or almond flour in your pantry you can grind some almonds to make almond meal in your food processor or high speed blender.
After you’ve tried these, you may also want to try Carrot Spice Energy Balls, Almond Butter Raw Energy Balls or Quick and Easy Raw Energy Squares.
