I love making cookies with fruit and vegetables. Some of my favourites include Carrot Cake Cookies, Lemon Cookies, and Raspberry Chia Linzer Cookies. But for a quick and easy cookie these Super Simple Banana Cookies are the answer. They contain no eggs, no dairy, no oil, no flour, and are the easiest cookies you’ll ever bake. They only have five ingredients that are staples in most pantries: bananas, almond butter, rolled oats, coconut flakes and chocolate chips. If you only have bananas, nut butter and rolled oats in your pantry you can make them with just those ingredients. If you only have bananas, nut butter and coconut, try them with those three ingredients. If you want to serve them as a breakfast cookie, use dried fruit like raisins instead of chocolate chips.
There are so many variations to these cookies
- Don’t like coconut? No problem, just add more rolled oats.
- If you want to keep them 100% unprocessed use raisins instead of chocolate chips.
- Try cashew or pumpkin butter instead of almond butter.
- Not a fan of raisins? Try chopped dates or dried cranberries instead.
- Add chopped walnuts or pecans to the recipe.
- Add cinnamon, ginger and nutmeg for a spicy version of these cookies.
These Super Simple Banana Cookies are a great place to start if you’re planning on doing some baking with children. All you need is bowl, a fork or potato masher and a couple of measuring cups, and the dry ingredients are easy for little hands to measure. These cookies make a perfect afternoon snack or a fun front door drive-by gift for friends and family.

Super Simple Banana Cookies
Ingredients
- 4 medium bananas mashed
- 1/4 cup almond butter
- 2 cups rolled oats (gluten free)
- ½ cup coconut flakes
- ½ cup mini chocolate chips (Enjoy Life brand is my preferred brand)
Instructions
- Preheat oven to 350°.
- Peel and mash bananas. Stir in almond butter until combined.
- Add remaining ingredients and mix together.
- Drop by spoonful onto a parchment lined baking sheet. Cookies will not spread during baking.
- Bake for 15-17 minutes, until browned on the bottom.
Notes
- These cookies freeze well.
