Today when I decided to create a new recipe, I knew exactly what the end result was going to be: Double Chocolate Quinoa Cookies.


Quinoa Flakes

The first time I saw quinoa flakes listed in a recipe several years ago, I had no idea what they were. Until that time, I had only ever heard of raw or cooked quinoa. I learned then that quinoa flakes are just quinoa grains that have been rolled flat into very thin flakes. Quinoa flakes make a great instant gluten free breakfast cereal. Just add 1 cup hot water to 1/3 cup quinoa flakes and let them sit for a few minutes to absorb the moisture. Add fresh or dried fruit, almond milk and a splash of maple syrup if you need a touch of sweet.


Quinoa flakes have the same health supporting properties as quinoa grains. They contain all of the essential amino acids, making them a complete protein, and they are gluten free and fibre rich. That makes them a great ingredient for Double Chocolate Quinoa Cookies.


Double Chocolate Quinoa Cookies

I have had such a craving for something sweet this week, especially chocolate. What better way to have chocolate than with Double Chocolate Quinoa Cookies? These cookies are made with a combination of three gluten free flours (almond, brown rice and sorghum); I used quinoa flakes as I would have used rolled oats in a cookie recipe; and the double chocolate deliciousness comes from raw cacao powder and chocolate chips. I usually make my own chocolate chips, but today I added Enjoy Life brand chocolate chips. I like Enjoy Life brand because they are free from most common allergens, including wheat, dairy, soy and nuts.



My favorite part of recipe development is taste testing. Even though I knew after the first bite that this Double Chocolate Chip Quinoa Cookies recipe was exactly what I was looking for, I had to taste a few more…just to be sure.



For this recipe I only made what I consider a small batch, 2.5 dozen. You can easily double the recipe to share or to have some extras for the freezer.

Gluten Free Double Chocolate Cookies

These cookies, with their double dose of chocolate, will absolutely satisfy your craving. Just add a cold glass of nut milk and you'll be in cookie paradise, without the gluten and processed ingredients you find in packaged cookies.

  • ½ cup coconut oil
  • ¾ cup coconut sugar
  • 2 eggs
  • 1 tsp vanilla
  • 1 cup almond flour
  • 1/3 cup cacao powder
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 1 cup quinoa flakes
  • ½ cup chocolate chips or chunks


  • Preheat oven to 350°.
  • Remove any lumps from coconut sugar. Use a mixer to cream together coconut oil and coconut sugar. Add eggs one at a time and beat. Add vanilla.
  • In a second bowl, sift dry ingredients together. Add dry ingredients to wet ingredients and mix well.
  • Drop by spoonfuls onto parchment lined baking sheet. Bake at 350° oven for 10-12 minutes. Makes 2 dozen cookies.


This recipe is easy to double so you have extras to share or freeze.
